Low Carb Paleo Coconut "Mounds"




I am starting a Paleo-friendly snack company and I think I know what ingredients are healthy and important to Paleo fans like you  -- BUT I need YOUR feedback to be sure I'm headed in the right direction!! 1 cup coconut oil, melted
2 cups shredded coconut, unsweetened
2 teaspoons of vanilla extract
1 tablespoon maple syrup
0.5 pounds of 72% dark chocolate (Trader Joe's Pound Plus Bars are great) or 1 bag of Enjoy Life Chocolate Chips if you only use non-dairy chocolate in your paleo cooking (the carb count will be slightly higher though)

 Makes about 30 "mounds."

1. In a large bowl, mix the coconut oil with the shredded coconut, vanilla and agave.
2. Roll up small mounds, place on a tray and freeze until they harden.
3. Melt the chocolate chips in a pot and drizzle over the frozen coconut.
4. Return dish to the freezer to cool and keep frozen.
5. Enjoy!

147 calories
6 g of carbs
1 g fiber
5 NET carbs
1 g protein
15 g fat
4 g sugar

  5. I just attempted this with flaked coconut rather than shredded (that's all I had) and it seems like I can't get the coconut to "bind" together, it all just falls apart... Is this normal? I lumped them together the best I could and they are in the freezer now, I was just wondering if anyone had any insight?
