Paleo Peanut Butter Cookies





I am starting a Paleo-friendly snack company and I think I know what ingredients are healthy and important to Paleo fans like you  -- BUT I need YOUR feedback to be sure I'm headed in the right direction!! Ingredients:

1 cup unsweetened, smooth peanut butter
1 egg
6 packets Stevia
1 tsp Agave
1 tbsp coconut flour
1/2 tsp salt

Pre-heat your oven to 350F. Mix all ingredients together in a large bowl. Grease a pan and put walnut sized balls of the dough onto the pan. Use a fork to press down the top of the balls and create a cross hatched design.

Bake for 12 minutes and cool. Makes about 20 small cookies.

6g fat
4g protein
1g sugar

  1. Peanut butter is not paleo. You could use almond butter instead.

  2. Thanks for the input. It is a good point that peanuts are technically legumes, which are not generally included on a Paleo diet. So anyone who wants to avoid legumes completely should avoid peanut butter. Personally, I find it to be an interesting debate as to why legumes are excluded from the Paleo diet, but nuts are included.

    Here is an interesting article discussing the reason legumes are excluded from a Paleo diet typically, but warns that nuts may be just as bad in large quantities.
